Fried Zucchini

There is nothing like sitting in bed with a big cup of coffee and blogging while watching the new Unsolved Mysteries on Netflix.






My little but not so little garden is starting to flourish with cucumbers and zucchini and I started remembering how my nana would make breaded and fried zucchini and decided to give it a whirl.

So for this recipe, I started cutting the zucchini in strips like nana did but it turns out the rounds are much easier to cook and eat. But either way it still tastes the same.


You don't want to peel your zucchini for this. Actually, I don't peel my zucchini for anything but just in case you do, don't for this recipe.

You're going to start by placed your sliced zucchini in a bowl of scrambled eggs, salt and pepper. For the coating, I used flour, breadcrumbs and grated parmesan cheese. Take each egg drenched zucchini piece and coat in the flour mixture and set aside.

You can use any oil for this but I prefer olive oil. You wouldn't typically fry food per say in oil olive because it burns easily but you're doing this as small batch and not for an extended time. You really only need about a minute per side.


Cool the zucchini on paper towels while you make your fancy sauce. The base for the fancy sauce is mayo and ketchup but it's way fancier than Brennan's mom's fancy sauce in Stepbrothers! I actually measured for this recipe to give you a broader idea of how much to use but always adjust to your taste preference. 


Ingredients:
1 and 1/2 zucchini
1/4c flour
1/4c seasoned bread crumbs
1/8c grated parmesan
Olive Oil for frying

Fancy Sauce
1/2 c mayo
1.5 tablespoons ketchup
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
salt and pepper to taste
