Summer Squash and Kielbasa Pasta




My oldest daughter, who is seven years old, suddenly wanted to help me cook. I was planning on making turkey kielbasa, sautéed zucchini from the garden and boxed pierogies. My daughter said "I'd really like to make macaroni with you."


I decided to make a summer squash pasta dish with kielbasa. I had just gotten my CSA farm share from Lyman Orchards that I split with a co-worker, so I figured why not add more veggies and see if they eat them. We used yellow squash, a white onion, celery(the celery grown up here is tiny but packs a bite), some of the green beans and I threw in a zucchini from my own garden for good measure.


After sautéing your kielbasa, use that pan to sauté your veggies in a little olive oil and spices. I used salt, pepper, garlic and onion powder, basil, and some red pepper flakes. After the veggies are tender crisp, I scooped them out of the pan and added some white cooking wine. You could easily use broth but the flavor of a white wine sauce adds a lot of depth to a quick pasta or chicken dish. I just eyeball the amount. I made 1/2 a box of pasta shells and just needed enough to coat. 


Finish the sauce with a tablespoon or so of butter, salt and pepper. Toss your pasta, veggies and kielbasa with the sauce. And believe it or not, this dish was great with some grated parmesan. I know it sounds odd with kielbasa but it worked. 



Everyone ate it! And my husband said that it was so good that it was worth picking out the shit you don't like, to eat it. That shit by the way, would be the zucchini and squash.
