Potato Salad

I don’t know what it is about my potato salad but everyone always asks me to make it for cookouts. My best friend even requested it for her baby shower years ago. 



It’s not much different from your traditional potato salad but I do add a kick with spices. 

For this batch I used red skin potatoes. Different potatoes are generally better for certain things but in a pinch, I never really noticed a difference whether it was russet, red skinned, etc. 


Start by washing, peeling and chopping your potatoes. You could cut them in half, then half again lengthwise and then start slicing as thick or thin as you want but try to keep the slices uniform. Also I wouldn’t go too thin because they could fall apart. I boil them in salted water. 

In a large bowl, I mix Mayonnaise, Spicy or Dijon mustard, depends on how boujee you feel that day, sweet relish(especially if you chose spicy mustard), Apple Cider vinegar, salt, pepper, garlic powder, onion powder, paprika(I know me and my obsession with f’ing paprika and potatoes), and if you want to give it a kick without too much spice, a dash of cayenne pepper. Sometimes I add dill or parsley as well. 


Once your potatoes are easily pierced with a fork, they’re ready. You don’t want mashed potatoes so be sure to check them frequently. 

Drain and cool your potatoes. I find it easier to lay them out on a baking sheet to cool a bit. You don’t want them hot when you add the dressing because the heat changes the chemistry of the mayo. 

Also more is key. Especially if you’re making this a day ahead because like with pasta, the potatoes are going to absorb. I’m not saying drown your shit in dressing but definitely more than just a coating. 

I don’t add chopped egg to my BBQ salads because I don’t like to be betrayed. It’s coated in dressing and you bite down to find it’s not potato but an egg? Yeah, not my cup of tea but it may be yours. So go ahead and add chopped hard boiled eggs, onion, celery or sliced black olives. Red peppers would add a nice crunch and pop of color as well. I usually add onions but it really depends on how much I already cooked for the party and if I’m already over it. 

3lbs of potatoes 
1 cup Mayo
1 tablespoon Spicy Mustard
1 tablespoon Sweet Relish
1/4 teaspoon Salt
1/8 teaspoon Pepper
1/4 teaspoon Onion powder
1/8 teaspoon Garlic powder
1/4 teaspoon Paprika 
1 teaspoon Apple Cider vinegar 
1/4 teaspoon Dill
