Sausage and Broccoli Pasta

One of my favorite and super simple and flavorful pastas to make is with sausage and broccoli. 



I start my taking my hot sausage links(you can use sweet if you prefer) and piercing them so they don’t bust while cooking. I lay them in a single layer in a deep skillet and brown each side. 



Wash and chop your broccoli. You can use frozen but I feel like the fresh makes a difference in this dish. Roughly chop your garlic and onion. I used a shallot because I had some from my farm share last week but a small sweet onion would do.



Remove the sausage from the pan and add in your garlic and onion. 




Depending on the oil situation you may need to add some olive oil. Sprinkle in some red pepper flakes and add your broccoli tossing to coat. Slice your sausage, it may still be undercooked inside but you're re-adding it to the pan anyway. Toss in the sausage and cook the broccoli until tender crisp and sausage is cooked, remove everything from the pan.




 Deglaze with some cooking sherry and slowly stir in a half cup of chicken broth. Add in some butter. 



At this point you can make this creamy or not. If you want it to be on the creamy side, add in a 1/4 cup of heavy cream. Bring to a boil and allow it to simmer down a bit before adding back in your sausage and broccoli. 

Boil your pasta according to the instructions. For this I used fresh fettuccine. 



Toss your pasta together with the sausage and broccoli sauce and some fresh parmesan.

Fettuccini
Head of Broccoli
2-3 gloves of garlic
1/2 cup sherry
small onion
1/2 cup chicken broth
1 tablespoon butter
salt, pepper, red pepper flakes
