Beef Enchiladas

These beef enchiladas have peppers, onions and potatoes in them. Well, they also have green olives but almost didn't because for some odd reason my husband decided to be in the kitchen, probably to make sure I didn't hide olives in them. But I did and he won't even fucking notice so oh well.



I used a pound of ground beef but you can substitute ground turkey, black beans, shredded chicken.. the possibilities are endless.


Start by breaking up and cooking your ground beef in a deep skillet. Add in your seasonings. I happen to have Hot Mexican Chili Powder but regular Chili Powder is fine. Also this has a nice heat to it without being too spicy but if you like it on the spicier side, add cayenne pepper.


Dice up a small bell pepper, small onion and small peeled potato. Once the meat is cooked, add in the veggies and continue cooking and stirring until the onions are translucent and add in the chopped or sliced olives.


I used a canned red enchilada sauce for this but you can use a green, or homemade. Add 3/4 of a cup of the sauce to the meat and allow to simmer while you prepare the tortillas. I used a corn and flour tortilla but flour OR corn work fine. Usually, I use low carb tortillas for this and it works. 


Cover the bottom of a baking dish with about a 1/3 of the sauce left. Add in 2/3 cup of shredded cheddar to the meat mixture and turn off the heat. Divide the mixture between the amount of tortillas you are using, usually 5-7 depending on the pan. Roll as tightly as you can, and this will make a mess just so you're prepared, and place seam side down in the pan. Cover with the rest of the sauce, ensuring you have every piece of tortilla covered. Sprinkle on another 2/3 of cheddar and cover the pan with foil and place in a 350 degree oven for 20 minutes. 



I drizzled some sour cream, dried cilantro and sliced black olives after baking. Pickled jalapenos would be great, green onions, or they’re just as good with no toppings.

1/4 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp hot Mexican chili powder
1/8 tsp chipotle powder
1lb ground beef
1 small potato
1 small onion
1 small bell pepper
Handful of sliced green olives
28 can of enchilada sauce
2 cups roughly of shredded cheddar
Package of tortillas
Toppings(sour cream, black olives, green onions, pickled jalapenos, etc)
