Chicken with Artichokes and Mushrooms

This is a lighter pasta that is loaded with veggies. You’ve got fresh tomatoes, mushrooms, spinach, artichokes along with chicken and pasta in a white wine sauce. 




I used fresh veggies and canned artichokes but frozen spinach would be an okay substitute for the fresh spinach. 



Start by browning your seasoned(salt, pepper, garlic powder) boneless skinless chicken breasts in a little extra virgin olive oil. Once cooked, set aside on a plate and cover with foil. 



Add to the pan your fresh sliced garlic and mushrooms and cook until the mushrooms are done. Deglaze the pan with white wine and chicken broth. 




Once the mushrooms are cooked, add in the baby spinach and artichokes and stir until the spinach is wilted. Finished with diced tomatoes, salt and pepper and onion powder. 



 Add in your sliced chicken. Cook your pasta to the directions on the package. For this pasta dish, I prefer penne. 



Mix together and serve!

Ingredients:
2 boneless skinless chicken breasts
package of Penne
1 can of artichokes
1 bag of baby spinach
cup of cherry tomatoes
3 cloves of garden
small package of sliced mushrooms
Olive Oil
1/3 cup of white wine
1/2 cup of chicken broth
Salt, Pepper, Garlic Powder, Onion Powder
