I love these easy Greek chicken skewers in the summertime. I pair them with my homemade tzatziki found https://www.theworkingmomsguidetobeingdomestic.com/2020/08/tzatziki-sauce.html.
Mix all your ingredients in a large bowl and set aside. Dice up your chicken breasts or thighs into roughly 1 inch chunks. Toss in the marinade, cover with plastic wrap and put in the fridge to marinade for 30 minutes up to an hour.
Carefully skewer the chicken tightly on metal or bamboo skewers and grill for about four minutes per side.
Serve with tzatziki sauce and a Greek salad or lemon dill rice. This is really great with grilled veggies as well.
Ingredients:
1.5lbs of boneless skinless chicken breasts or thighs
1/2 cup olive oil
Juice of one lemon
1 tsp salt
1/2 tsp black pepper
1 tsp oregano
Couple dashes of paprika
1 tsp onion powder
1/2 teaspoon garlic powder
